A Konkan speciality, the Kombdi Vade is served with spicy chicken curry, solkadhi and onions. The vades are made with a special flour which includes rice flour, a bit of ragi or wheat and some even use urad dal. It has a crunchy crisp texture but when you bite into it, it’s soft and gooey. I could draw similarities with the bhature of chole-bhature fame in terms of texture, not taste though. And practically every eatery in Ratnagiri serves this dish. It could be quite heavy on the stomach but it’s sure to satisfy your taste buds. It’s available in Mumbai also but the taste is much much better when you’re in the Konkan region. Especially in small eateries where the food is cooked in a hand-made clay stove, on an open flame by local maushis or women. And the experience is worth every penny and every bite:)
